American pancake vegan recipe
Here's a vegan recipe for fluffy American pancakes:
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup plant-based milk (such as almond milk, soy milk, or oat milk)
- 1 tablespoon apple cider vinegar or lemon juice
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
Instructions:
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the plant-based milk and apple cider vinegar (or lemon juice). Let it sit for a couple of minutes to curdle slightly.
- Add the vegetable oil and vanilla extract to the milk mixture and whisk until well combined.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined. It's okay if there are a few lumps.
- Let the batter rest for 5-10 minutes. This allows the baking powder to activate and helps the pancakes rise.
- Preheat a non-stick pan or griddle over medium heat. Lightly grease the surface with cooking spray or a small amount of oil.
- Scoop 1/4 cup of batter onto the pan for each pancake. Cook until bubbles start to form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, adjusting the heat as needed to prevent burning.
- Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, vegan butter, or vegan whipped cream.
